Vegetable Pasta & Carbonara

INGREDIENTS

Serving Size

1 cup corn kernels

1 cup mixed vegetables cut and boiled for 5/7 minutes (broccoli, snow peas, green beans or any readily available vegetables)

1 chopped onion

2 minced cloves of garlic

1 tbsp butter

3tbs Cremica Pizza Pasta Sauce

Salt to taste

1/2tspn crushed red pepper flakes

16 ounces (2cups)Pasta (Penne or Spaghetti or Linguine)

1/3 cup Cremica Vegetarian Mayonnaise

2 tsp cup grated Parmesan cheese

Freshly ground black pepper

Chives, or any fresh herb

METHOD

Preparation and Cooking Time: 30-40mins.

Heat a large skillet over medium heat.

Add butter onions and garlic and cook till light brown.

Add all vegetables and Cremica Pizza Pasta sauce. Keep aside.

Boil the pasta as per instructions.

Reserve half cup pasta water and drain the rest.

Stir pasta water to the vegetables mixture and simmer on low heat for 5mins.

Add the drained pasta and toss to combine.

In a small bowl whisk the cream lightly add Cremica Vegetarian Mayonnaise and Parmesan cheese.

Add salt and pepper to taste.

Toss with the pasta and garnish with chives.
